That is a lot of jalapeno peppers! I stuck most of them in the freezer – I hope it doesn’t ruin them. I’m hoping I can just take out one or two as I need them when I’m making salsa or whatever.
I can’t remember what those little light green round peppers are called, but they are the hottest peppers I’ve ever tasted. I put just one in a stir fry thing I did the other night and we could definitely feel the burn! I even took all the seeds out! Good thing I didn’t put more than one in there.
I went out and picked some more tomatoes. This is what was left after I made tomato sauce with a bunch of them. I still have more out in the garden too! Next year, I’m not planting so many tomato plants! I think two plants would be enough for us.
Here is the sauce I made after it had simmered all day. It turned out really well. I think I used about 15 tomatoes – I didn’t want to use too many because I didn’t know what I was doing and didn’t want to waste too many if my sauce ended up tasting yucky.
I just parboiled the tomatoes so that I could peel the skin off them, then I added them to some chopped onions and garlic that I had sauteed in some olive oil. I used my stick hand blender to smash the tomatoes up into a slightly chunky consistency. Then I just added Italian seasoning, salt, pepper, brown sugar, granulated garlic, and parsley to taste. Then near the end, I added some red wine to finish it off. I have no idea what amounts I put in of anything – I just kept tasting it and throwing in what I thought it needed.
At the beginning, the sauce didn’t have much colour and I just about added a can of tomato paste to give it some, but I’m glad I decided against it. I wanted to stick to fresh ingredients. I was happy to see that the sauce got richer in colour and richer in flavour as the day went on.
Here is the lovely spaghetti dinner I had that night. I was kicking myself for not having any fresh parmesan cheese on hand! But of course, I decided to go with canned parmesan rather than no parmesan. Ha!
I put the leftover sauce in the freezer and I’m going to make sure I have fresh parmesan to go with it next time. Oh, and garlic bread made from fresh crusty french bread and fresh butter and garlic! Oh, and home made chocolate cake and vanilla ice cream for dessert! I might be pulling that sauce out of the freezer soonerer than laterer!
